Life would be too easy otherwise.<br /><br />I truly appreciate the effort you've made to solve the French fry riddle, and your candor about some of your first efforts. My first order (day 1) was more tough than crisp. The second one (day 2) was much better, but it also seemed like it <em>might</em> have been baked.<br /><br />Maybe your potatoes are too fresh? According to one article, Ray Kroc discovered that potatoes should be <a href="http://www.gladwell.com/2001/2001_03_05_a_fries.htm" rel="nofollow">cured</a> to reduce their sugar content. Back then, potato storage must have been much more informal than it is <a href="http://www.kimberly.uidaho.edu/potatoes/manage.htm" rel="nofollow">today</a>. There are many articles about storage, including one that mentions the need to <a href="http://oregonstate.edu/potatoes/storproc.htm" rel="nofollow">recondition</a> potatoes before frying them.
